Yum-O-Liscious

I wanted to share with you some of the amazing food that I have been eating recently.

First up is my take on Karyns pistachio basil pesto pasta. I liked my version better. This was super yummy and really fast and easy to make.
Here is a delicious pizza that I made using a flax seed dough, some of Karyns seed cheese, gaucamole and a tomato mango salsa that I made. It was incredible. Awesome. Absolutely fantastic!!
Next we have an incredible sandwich I made using Karyns bread and seed cheese, some ripe tomatoes and avocadoes and some spinach. The consistency of the bread was very soft and it was super yummy, but it did not hold up that great and sort of fell apart. Still it was really good and I did enjoy it.


Next up, Kayrns tamales from the restaurant. These came with a mango salsa on the side that was really good and inspired me to make my own version of mango salsa as well.


The food has been so yummy and I have really been enjoying it. I do not think that I am losing weight right now though and since that is the goal I think I need to curb the gourmet food kick that I have been on. It is wonderful to me that I can eat these amazing creations and maintain my weight. But for now I need to lose. So I am going to go back to the basics of fruit, juices, green smoothies and salads with treats as just that, treats. All of this food has been amazing and I really credit the awesome raw food with helping me to stay on track while hubby was gone on his trip. I still have a few more food pictures to post later. I'm Still Here - Need Some Recommendations

I felt the need to pop in and comment on this blog since it has been a little while. Life is great and I am still diong really good. No slip ups and 100% raw. My exercising has not been what it should though. I have not been on the elliptical for at least 3 days and I am not sure if I will get on tonight. I really ought to. I don't want to lose all of the progress that I have made.

On another exercising note Hubby wants to get some sort of a weight machine. We are researching different types. We don't want free weights. Anyone have any good recomendations on a good weight machine? We would like to be able to do a wide variety of exercises from rowing to bench pressing and be able to work out all areas of our bodies. It will be so amazing to have such a machine here to use. Any words of wisdom will be greatly appreciated.

Right now I am enjoying some delicious grapes. I am eating a lot of oranges lately too. I love those! Also I am really enjoying my daily salads with lots of broccoli. Mmmmm! I have not been making carrot juice lately. The last batch I made was not so good. I need to get back to doing that, and I have plenty of carrots to do it, but I have been too lazy lately.

I guess that is all.

A New Record

Only have a minute here. Last night I did the elliptical again and went 2.32 miles in 30 minutes. It is my best time yet and I was so happy to have accomplished that. Since today is Sunday I am going to take today off and resume again tomorrow. This coming week I plan on working on strength on the elliptical. So far I have been working out on intensity 1. This week I plan on mixing it up and working more on building strength and not so much on distance by upping the insensity levels and varying them during the workout. I am hoping that this will be similar to when my big helper and I did the hills near our old house in between our distance jogging days. It really seemed to mae the distance jog easier. So that is the plan anyways. Then next week I will focus on distance again.

I just got done making stuffed cherry tomatoes. They had a sunflower/sundried tomato filling and they were really good. I only got 3 of them before the children scarfed them down. I didn't even get a picture! I still have some filling left though. It think it will taste good in a lettuce leaf.

Ok, thats all. I am off to peel a couple of succulent oranges for my lunch. Mmmmmmmmmm!

An Awesome Day!

Today was just so great. I just got done with an awesome workout. Once again I did not want to do it. I had to remember how happy I always am once I get done and that feeling drives me to do the workout another day. So I got on the elliptical, strapped on the headphones and started going. And I beat my record again. I am getting a little bit faster and stronger every day which is so cool. Another great reason to keep going. I don't want to lose the progress that I have made. So today I went 2.21 miles in 30 minutes and then continued on until I had burned 300 calories. My goal is to eventually get to three miles. I want to be able to do another 5K. I wonder if working out on the elliptical is sufficient training for running (or jogging (slowly )in my case) a 5K if I am doing similar distances?

I realize that I have not been recording what eat. So I shall do so now.

Today I had a pint of carrot/apple juice for breakfast.
a bunch of grapes as a mid morning snack
a delicious green smoothie with 3 bananas, frozen blueberries, spinach and fresh mint (so yummy!) for lunch
2 sinfully delicious oranges for an afternoon snack. (these were seriously insanely good!)
a large mixed salad with creamy tomato basil dressing for supper

I am full and happy. I have sweat dripping down my back and face now from my invigorating workout and I feel great!! This is why I love raw food. This feeling right here of knowing that I am doing the most awesome thing in the world for my body. And this feeling of actually having the energy to exercise at the end of the day. And I love how I feel after I workout which is what motivates me to do it all again the next day.

I am off now to relax on my couch with a good book and some cold water.
